Ingredients:
  • Sabudana – 1 cup

  • Boiled Potatoes – 2-3

  • Chopped Cashews – 12-15

  • Chopped Almonds – 6-8

  • Fox Nuts – 1/2 cup

  • Roasted Peanuts – 1/4 cup

  • Clarified Butter – 1 teaspoon

  • Whole Red Chilies – 2

  • Curry Leaves – 18-20 leaves

  • Rock Salt to taste

  • Chopped Fresh Coriander – a little

  • Chopped Green Chilies – 1 teaspoon

  • Lemon Juice – 1 tablespoon

Method:

1. To make 'Sabudana Khichdi', first, soak 1 cup of sabudana for one to one and a half hours. Ensure there's enough water for the sabudana to be fully submerged.

2. The sabudana will absorb all the water and swell. Ensure all the water is drained to avoid the sabudana from sticking together while cooking.

3. Now, take a pan and heat the clarified butter. Once slightly warmed, add cashews, almonds, and fox nuts. Fry until they turn light golden brown, then set them aside.

4. Add a little more clarified butter to the pan and, once heated, add cumin seeds, curry leaves, green chilies, and whole red chilies. Once these ingredients crackle and get slightly roasted, add the soaked sabudana, rock salt, chopped boiled potatoes, and roasted peanuts. Mix everything thoroughly over low heat.

5. Continue to cook on low heat, making sure all ingredients blend well without burning.

6. Add the fried cashews, almonds, and fox nuts back into the mixture. Toast lightly over medium heat, then remove from the stove.
